Is there anything more satisfying than the smoky, spicy flavor of a good salsa tatemada? For me, it's the perfect accompaniment to any meal, from crispy tacos dorados to a simple bowl of beans. And today, I want to share my secret recipe with you, one I've perfected over the years.

 

Why do I love it so much? Salsa tatemada is a Mexican classic that always takes me back home. Roasting the ingredients on a comal, feeling the aroma fill the kitchen, and then grinding them in a molcajete is a ritual I truly enjoy. The final result, a smoky, slightly spicy salsa, is simply irresistible.

What do we need? Essential tools:

Clay comal: To give our ingredients that smoky flavor.

Molcajete: The perfect tool for grinding and releasing the flavors of our chiles and spices.

 

 Ingredients (serves 2-3):

  • 6 tomatillos
  • 1 ripe tomato
  • 1 large shallot
  • 2-3 garlic cloves
  • 1 serrano or jalapeño pepper
  • ½ avocado
  • Salt and pepper to taste

Preparation:

  1. Roast: Place all ingredients on a hot comal until the tomatoes burst and the shallot is soft.
  2. Peel and chop: Remove ingredients from the comal and let cool slightly. Peel the garlic and shallot, chopping the latter into small pieces. Mash the garlic in the molcajete until it forms a paste.
  3. Grind: Add the roasted ingredients to the molcajete and grind until you reach your desired consistency. You can leave it chunky or smooth.
  4. Season: Adjust the seasoning with salt and pepper to taste.
  5. Finish: When the salsa is ready, add diced avocado and a handful of chopped fresh cilantro. Stir gently to combine all the flavors.

And there you have it!

This salsa tatemada is my personal favorite. Its versatility allows you to enjoy it with a wide variety of dishes.

Here are some more tips to keep in mind:

  • Heat level: If you prefer a milder salsa, remove the seeds from the chili before roasting.
  • Pairings: Combine this salsa with your favorite tacos, quesadillas, huevos rancheros, or simply with some homemade tortilla chips.
  • Personalize: Add other ingredients like cilantro, red onion, or a squeeze of lime juice to make it your own.
